It exists so a shopper can compare two products in ten seconds without doing any maths themselves. The format, the nutrient list, and even the rounding of every number are fixed by regulation — nothing on that panel is a marketing choice.

The 2016 redesign: what actually changed

The label most people picture is the 2016 version. The FDA finalized this overhaul on May 27, 2016, and compliance became mandatory on a staggered timeline: manufacturers with $10 million or more in annual food sales had to comply by January 1, 2020, and smaller manufacturers followed by January 1, 2021. Both deadlines have long since passed, so there is no legal grey area left — every label printed today must use the current format.

The old pre-2016 panel is sometimes still floating around on templates, spreadsheets, or even old packaging mock-ups people copy from. It is not legal to use. If you're starting from an old template, throw it out and start from the current requirements.

The redesign wasn't cosmetic. The FDA's stated reasoning was that nutrition science and eating habits had moved on since the original panel was introduced in the early 1990s, and the label needed to catch up — larger calorie type because that's the figure most people actually look for first, updated serving sizes because portion norms had shifted, and a new Added Sugars line because the distinction between sugars naturally present in a food and sugars an ingredient list added on top of that had become a meaningful one for public health guidance.

What's genuinely new compared with the old panel

Reading the panel from top to bottom

Start at the top. 'Serving size' and 'servings per container' sit above a heavy black rule, because everything below that line is calculated per single serving — not per package. A bag of crisps might contain 3 servings; the calorie count you see applies to one of them, not the whole bag. This is the single most common source of confusion for anyone new to reading a nutrition facts label: people eat the whole bag, then compare it against a per-serving number.

Below that comes Calories, printed large and bold. Then the nutrient block, which runs in a fixed order that never changes between products. Reading a nutrition facts panel is really just reading the same fifteen lines in the same order, every single time — once you know the order, you know the whole label.

A worked example

Picture a bag of granola with a label showing a 55 g serving size, 4 servings per container, 220 calories, 9 g Total Fat (12% DV), and 340 mg Sodium (15% DV). Using the 5%/20% rule, the fat is neither notably low nor high, but 15% DV sodium per serving is worth noticing — eat two servings and you're already close to a third of a day's sodium from one snack. Multiply the calorie figure by all 4 servings and the whole bag comes to 880 calories, which is the number that actually matters if you're eating straight from the bag rather than measuring out 55 g.

That's the whole skill, really: read the serving size first, treat every number below it as 'per serving' unless the panel explicitly says otherwise, and use %DV as a shortcut rather than converting every gram figure into a percentage yourself. If you wanted to check that 340 mg sodium figure by hand, you'd divide it by the 2,300 mg Daily Value from the table above and get roughly 14.8%, which rounds to the 15% printed on the panel — the same calculation the label itself is required to show its working for.

The 15 mandatory nutrients under 21 CFR 101.9(c)

The FDA nutrition facts panel must declare exactly these nutrients, in this order, whenever they're present above a trivial threshold:

That's fourteen named nutrients plus Calories at the top, which is how you get to the fifteen mandatory declarations referenced throughout this guide. Total Sugars and Protein don't carry a %DV by default, and Trans Fat never does — there's no established Daily Value for trans fat, since no amount of it is considered beneficial.

Nutrients present in genuinely insignificant amounts can be omitted from the panel entirely, provided the label carries a footnote such as 'Not a significant source of dietary fiber' in their place. Manufacturers can also voluntarily declare extra nutrients beyond the mandatory fifteen — some brands still choose to list Vitamin A or C even though neither is required anymore, usually because it supports a specific marketing claim elsewhere on the pack.

What does %DV actually mean?

The % Daily Value column is the fastest way to judge a food without doing arithmetic. It expresses each nutrient amount as a percentage of the Daily Value for someone eating a 2,000-calorie-a-day diet — a reference point, not a personal target. The FDA's own rule of thumb, often called the 5%/20% rule, cuts through the rest: 5% DV or less per serving counts as 'low' in that nutrient, and 20% DV or more counts as 'high'. Glance at Sodium and Fibre using that one rule and you can size up a product in seconds, without reading a single gram figure.

A quick sanity check worth doing before you publish any label: the Total Carbohydrate Daily Value is 275 g, not the 300 g figure you'll still find on some outdated reference pages and old templates. Some packages need two nutrient columns side by side — one 'per serving' and one 'per package' or 'per unit'. This dual-column format is required under 21 CFR 101.9(b)(12) when a package contains between 200% and 300% of the Reference Amount Customarily Consumed (RACC) for that food category and is packaged and sold as a single unit likely to be eaten in one sitting. Think of a large single-serve smoothie bottle that's realistically a two-person drink — the label has to show both possibilities so nobody's misled either way.

Common mistakes people make reading or building a label
